coconut cashew butter

Ingredients
  1. 2 cups flaked coconut (unsweetened)
  2. 1 cup cashews
Instructions
  1. Place the coconut and cashews in a high speed blender or in a food processor.
  2. The mixture will start off chunky but with increased blending, it will turn into a smooth butter.
  3. Check the manufacturer’s manual for your machines specific instructions on processing nuts. Be careful not to overheat your machine!
Notes
  1. This nut butter will keep longer in the fridge but it will be rock hard. Scoop some out and soften in the microwave prior to using!

 

lemon pistachio butter

  2. 2 T canola or olive oil
  3. 2 ½ cups pistachios (shelled)
Instructions
  1. Place ingredients in high powered blender or food processor.
  2. Blend according to your machine’s manual’s page on processing nuts.
  3. The mixture will start out chunky but will smooth out into a paste.
  4. Be careful not to overheat your machine!

  1. 2 T cocoa
  2. ½ cup quality dark chocolate, melted
  3. 2 cups hazelnuts
Instructions
  1. Place ingredients in high powered blender or food processor.
  2. Process according to your machine’s directions on processing nuts.
  3. The mixture will start off chunky but will turn into a smooth paste.
  4. Be careful not to overheat your machine!
vanilla + toasted pecan butter

  1. 2 cups pecans
  2. 2 teaspoons vanilla powder
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place the pecans in a single on a baking sheet.
  3. Toast in oven for 3-4 minutes. They will be done when you can start to smell the sweet aroma of toasted pecans and have turned a more golden colour.
  4. Keep an eye on the pecans as they turn quickly from toasted to burnt!
  5. Allow the pecans to cool to room temperature the place them, along with the vanilla powder, into a high powered blender or food processor.
  6. Follow your machine’s instructions for processing nuts.
Notes
  1. This nut butter is runnier than most other recipes. If you’d like it to be thicker, try adding 1/4 cup of coconut oil.

sweet n spicy pumpkin seed butter

  3. 1 tablespoon honey, maple syrup, or corn syrup

  7. ¼ tsp cinnamon
Instructions

  3. The mixture will start out crunchy but will turn into a smooth paste.
